This is my fifth Whaler, it's a 1978 13' Standard with a 1991 30 hp Evinrude with tiller steering. Right now I only have one 6 gallon tank, and it kinda makes me nervous, cause I have no idea what kind of fuel consumption I'm going to experience. What should I expect (gph) at cruising speed (3000-3500 rpms)?
You can probably run most of the day on that 6 gallon tank.
Here's a rule of thumb for you.....when you hit about 1/2 tank of gas, it's time to turn around and head back towards the dock.
Worse case...just go out and buy yourself another 6 gallon tank. They're cheap and it will provide you with a peice of mind until you get to know your boat.

i also have a 6 gallon tank on my 1987 13 sport. I have a 1989 30 horse Mariner and i run around the bay for about 4 hours at a time and have never come close to running out of gas.
