I have used a citrus based remover from Lowes or Home Depot and it worked well . I was lucky that the previous owner did not follow the bottom paint manufacturers directions and sand the bottom with #80 grit sand paper first . There was minimal staining that I sanded out with 1000 wet paper . If the hull is real old the gel coat will tend to spider crack and flake from the oils being extracted over time and you may have to skim coat or spray a thin layer of gel coat on and sand it down.
