Looking to restore fishing deck on 1968 Sakonnet. Any suggestions with regards to what type of wood to use.

I recall reading the OEM material was painted pine. It was not fancy.

If you are redoing the entire platform, you could use mahogany like a few other members have done to their Sakonnet 16 models.
